At Trillium, we celebrate exceptional food without the formality, served in a vibrant and laid back setting. Our menu centres on seasonal sharing plates inspired by modern British cooking with European influences, dishes that focus on bold flavours, balance, and simplicity. Stay for an indulgent dinner, or catch the sunset on our heated terrace with a glass of wine and a few small plates.

We offer 42 wines by the glass, including sparkling, white, red, rosé, orange wine, dessert, and fortified wines.

Highlights include Krug by the glass, and, due to our affiliation with Loki Wine Merchants (with Phil Innes as one of our owners), our wine menu is dynamic and constantly evolving. Our bottle list spans 33 pages, with approximately 350 wines.

Krug Grand Cuvee 173

Krug is a staple of fine Champagne, and we have it by the glass for £55, which is one of the best prices in Birmingham. Chef Glynn Purnell has been a longstanding Krug ambassador for many years and adores this Champagne house.

Chablis William Fevre

Chablis from the famous Burgundy winemaker William Fèvre, known for producing high quality Chardonnay that brings beautiful elegance, great acidity, and freshness.

Chateau Cantenac Brown 2012, Margaux

A beautiful Red Bordeaux from one of the most famous appellations in the region. Excellent ageing potential, outstanding winemaking, and real elegance, all for £25 a glass. One of Thomas’s real favourites.

Thomas Moore

Thomas began his hospitality career at Purnell's aged 16, where he discovered his passion for wine. By 18, he was working behind the bar making cocktails and serving wine. After completing WSET Levels 2 and 3, he became Head Sommelier at Simpsons Restaurant, before returning to work with Glynn Purnell and Phil Innes at Trillium at the age of 22, where he plans to further his career.
