République is owned by Chefs Walter and Margarita Manzke. Centered in the heart of Los Angeles, the historic building in which it resides was originally erected in 1929 by Charlie Chaplin. République builds on this story, offering a gastronomic environment imbued with history and grandeur. The space features a casual bakery, café, bar and a formal dining area, serving a French-inspired menu.
We do quite a few wine pairings, so the Coravin is the perfect tool. I find about 50% of the people that order off the Reserve by the glass menu are excited that we have elevated choices especially when they are the only ones drinking. We are known for our extensive wine program, and the Coravin system provides us with the opportunity to pour some really special wines.
