Eylan offers seasonally-driven Cal-Indian cuisine centered around a wood-fired grill, with thoughtfully sourced produce and a variety of proteins cooked over the embers. Wine director Andre Sydnor's program offers depth in classic regions, offering a variety of options for casual wine lovers while including more exclusive selections for serious oenophiles.
Santa Cruz is in our backyard, we consider these moreso than Napa and Sonoma the "local wines" and it is a main focus of our program. We have a curated selection of Burgundy, Loire, Champagne, and Piedmont, and are continually expanding and evolving our offerings. As a young restaurant, we continue to explore the infinite possibilities with our cuisine unlike any other restaurant in the US.
