We pride in well-curated Sake selection, focusing diversity under the concept “There is always suitable sake for every palate”. Moreover, we offer Grower Champagne by the glass, to celebrate the craftsmanship of the producers. Also as an unofficial ambassador of Japanese wines, to raise awareness of its quality, by offering few selection by the glass, made possible by the availability of Coravin.

Shichiken Sparkling Sake "Yama no Kasumi" Yamanashi Meijo

With the surge of Sparkling sake but still less available in dry style, Shichiken offers range of refreshingly dry but delicate, naturally sparkling (2nd fermentation in the bottle) sake. "Yama no Kasumi" is a slightly cloudy expression, with underlying mineral & soft bubbles.

2019 Hillside No.3 Hundred Hills

The wine has been out staple English Sparkling since opening. The selection was based on the team's visit to try the entire range & selected the most matching label to go with our Oamakase. Late harvested parcel of Chardonnay & Pinot Noir contribute to its creamy yet vibrant ripe citrus notes.

2023 Yoichi Nobori N Domaine Takahiko

Each year, we secure very minimal quantity (usually 3 bottles) of Pinot Noir from Domaine Takahiko, and still offer by the glass to be available for those curious minds. Hailed almost as though Cult wine, the wine of Takahiko Soga now has wide fan base all over the world. His Pinot Noir resembles those of Burgundy, but with touch of unique Umami and hint of Japanese plum.

Saki Takase

Began my career at Umu London, soon developed passion for beverages. First sommelier role at Hakkasan Dubai, an institution for a young sommelier. While gaining experience in Dubai & Tokyo, continued education for wine & sake. Taken a role as Hotel Beverage Manager at Bulgari Resort Dubai 2018-2022, then F&B Operation Manager for Dubai’s Homegrown F&B company, before returning to London in 2023.
