Alain favors and prefers to work with organic, biodynamic, and natural wines, produced on a human scale, with minimal intervention throughout the process, promoting the value of agriculture without the use of pesticides in the vineyards, the spontaneous fermentation process of the wines, and with no or only a small amount of added sulfites (sulfur dioxide), as this way we deal with living wines.
