Grown on the Spedding vineyard just beside our restaurant, the 2022 Trahere Chardonnay is, for me, the purest expression of Main Ridge. From high-density vines, it carries white flowers, peach and a savoury chalky texture from the vintage’s sun-filled ripening. On our list it finds a natural partner with Manjimup marron, bisque, parmesan and cheddar – the wine’s mineral freshness and fine detail cutting through richness while echoing the dish’s delicacy. It’s a perfect example of how our wine list is built: wines of place that sing with food.
