With over 80 labels selected by specialist Gabriela Bigarelli and sommelier Oscar Paredes, our menu aligns with the house's core philosophy: a special place for organic and sustainable wines, appreciation of national production, and surprising pairings from the New World (NZ, South Africa, California). The 21+ labels available by the glass create refined and complex pairings with the exclusive menu.

Today, at GB Consultoria, she connects importers, global wineries, and dining experiences. Oscar Paredes is an Ecuadorian sommelier graduated from ABS. In his passion for exploring the world, he is dedicated to the promotion and democratization of wine.
