Highlights include Domaine Vacheron's Sancerre and the white Chateauneuf-du-Pape of Chateau de Nalys, hardly standard beach-club pouring. Three WSET Level 3-qualified sommeliers, Jacob Low, Shannon Deane and Steve De Maio, work the floor, happy to walk a table from a familiar Margaret River Chardonnay to something organic and unexpected.
