The glass selection is generous for a room this size, and the menu notes are written with a wink, which makes lining up two or three pours side by side feel like play rather than homework. Chef Nando Carneiro sends over snacks built to sit beside them. There are only a handful of stools indoors. On warm evenings the crowd drifts onto the tree-lined pavement, glass in hand, and that is exactly the idea. Every visit seems to turn up a new producer.

The ten-course menu is organised in three acts that track São Paulo's seasons. Down in the cellar, around a thousand labels are held, with Burgundy the clear centre of gravity, backed by Bordeaux and Champagne from celebrated houses and rarer names. Several pairing options accompany the menu, and the sommelier team pours by the glass with real depth. A long evening, and worth every course.
