Saddle has become in recent years a reference of contemporary classic, where everything revolves around the customer, featuring one of the most important wine cellars in Madrid with a classic concept based on grand houses and small producers. We combine great cuisine with techniques from French cooking and Spanish products, a place based on an à la carte menu focused on the customer.

The menu was initially designed by Israel Ramírez, now the restaurant's director, incorporating top producers alongside the search for special vintages, as well as providing the opportunity to enjoy more than 60 wines by the glass. The menu is based on the Old World, with the exception of the greats from the United States. We have around 2,000 references focused on Burgundy and Champagne.

We are a team of four sommeliers specializing in the classic Old World concept who have worked on three continents and have gained knowledge over the years by adapting to the needs of today's audience without neglecting the heritage of the Old World in wine. We combine years of experience with studies such as WSET and CMS to provide a well-rounded experience.
