Haydée by Víctor Suárez is a Michelin-starred gastronomic restaurant where Canarian cuisine is expressed through memory, local produce, and emotion. Inspired by La Gomera and the figure of grandmother Haydée, it offers an intimate, elegant, and deeply connected experience with the territory.

At Haydée, the entire wine list can be enjoyed by the glass thanks to Coravin. Our selection is born from the Atlantic influence, small producers, and landscapes marked by biodiversity, trade winds, and volcanic soil. Each bottle tells a liquid story of the land, its people, and its memory.

Chablis 1er Cru Vaillons 2022 — Vincent Dauvissat

One of the most sought-after references of Chablis. Dauvissat is considered the great master of the appellation, with minimal production and global demand. Impossible to find outside of a few tables in the world.

Vidonia V.P. 2024 — Suertes del Marqués

Single-parcel Listán Blanco from the Orotava Valley, Tenerife. An indigenous variety of pre-Hispanic origin, cultivated in vineyards on volcanic slopes. Only a few bottles per harvest.

Táganan Marmalagua 2024 — Get drunk

Vidueño from Tenerife: a blend of nearly extinct local varieties, from old vineyards planted together. A wine that does not exist anywhere else on the planet, produced by one of the most influential projects in today's Spanish wine scene.
