One of the country’s most celebrated restaurants, Quay is the creation of leading Australian restaurant group, Fink, and Executive Chef Peter Gilmore. With an emphasis on showcasing quality wines that communicate a sense of place and time, the Quay wine list champions locally sourced produce while still tipping its cap to international styles.

The Quay wine list is a labour of love, curated over the years to represent the best of both Australian and international producers. Our by the glass program is a living, breathing thing, comprising about 40 core wines with an additional selection of rare and premium cuvees that rotate in and out. We are privileged to be able to showcase both iconic and lesser known wines across all our offerings.

2020 Mount Mary Réflexion Fumé Blanc

A rich and textural example of Sauvignon Blanc from one of Australia's top producers. It marries the tropical fruit and herbaceous notes the grape is known for, with a creamy, rich texture more in line with top Chardonnay. The 2020 Réflexion Fumé Blanc had only about 600 bottles made, and is only available at Fink Group restaurants - Quay, Bennelong, and Otto.

2021 Odile Thieullet l’Indépendante Meunier Extra-Brut

100% Meunier champagne by an up-and-comer based in Cuisles, from her first official vintage. Only just arrived in Australia, there were only 1305 bottles produced overall. Super mineral, with a lushness of texture coming from young barrel age.

2022 César Márquez Vino de Villa Valtuille Mencia

Márquez is one of the producers at the forefront of redefining traditional winemaking regions across Spain. Based in Bierzo, he focuses on Mencia for his reds and Godello for the whites. This is lighter in weight with more emphasis and clarity in fruit and terroir than winemaking. Surprisingly versatile, incredibly food friendly, and eminently drinkable.

The sommelier team at Quay come from wide reaching backgrounds, sharing a love for wine but each with individual style and passion. An array of qualifications are held across the team, including the Court of Master Sommeliers Advanced and Certified Certificates, and WSET Level 3.
