Valentina sits above street level, overlooking the beautiful Gold Coast beaches, with an atmosphere inspired by a Mediterranean coastal village. Our wine menu offers a unique glimpse into the landscapes and traditions of Italy, featuring regions such as Mt. Etna in Sicily and Tuscany, alongside distinctive grape varieties including Nerello Mascalese and Carricante.

Shun Eto is an experienced wine professional with an international hospitality background. Born in Tokyo and raised in Queensland, his career spans leading venues across Australia and Japan. He has curated wine programs for QT and Ovolo Hotels and is now developing Nama Wine, while continuing to curate wine experiences across Australia. His philosophy is to create wine lists that tell a story.
