Chef Guido Paternollo's culinary proposals are highlighted by a bright and welcoming architectural space designed by architect Flaviano Capriotti. The color palette, which varies from yellow to brown to green, recalls ingredients from the chef's typical cuisine and shapes an experience that is based on the rhythm of the seasons and respect for the times of nature.

The gastronomic experience is completed by an excellent cellar, custodian of an important selection of Champagne, Barolo and Brunello labels and a varied choice of more than 20 proposals by the glass.

Château Jouvente, AOC Graves Blanc

Bordeaux is world famous for its great red wines. Precisely for this reason, with Château Jouvente Blanc, we decided to let guests discover the white versions of this excellent region. Obtained with sauvignon and semilllon, in the Graves soil it expresses whites of the highest level.

Gravner, Ribolla, Venezia Giulia

Pioneer in the use of Georgian amphorae in Italy, the Coravin proposal is a tribute to the foresight and tenacity of this producer. His Ribolla is the essential business card to let guests know and appreciate this style of winemaking.

Michele Satta, Cavaliere, Toscana IGT

Pure Sangiovese, use of modern containers for fermentation and refinement. With this Coravin selection, we want to offer the guest the possibility of tasting a great Sangiovese in a contemporary key and above all from an area, Bolgheri, atypical for the production of this variety.

Lorenzo Alberti - Head Sommelier, Cristian Carias - Sommelier

The first approach was in 2015 at the Park Hyatt Milan. In 2017 I obtained the AIS Sommelier diploma. In the field, I was lucky enough to have important teachers, first at the Park Hyatt and then at Davide Oldani's DO** restaurant. In 2022 I obtained the Alma-AIS Master's degree while in 2024 I completed my WSET third level studies. I am currently head sommelier at the Park Hyatt Milan.
