Pauline is an homage to Pauline Baker, credited for helping popularizing Latin and Caribbean cuisine; the main ethos of our menu. The wine list not only helps bring out the best flavors in our dishes but also highlight the regions popularized by Pauline in her travels with Charles Baker. Our list features many organic, biodynamic and regenerative winemakers from South America and the world.

We pour 21 wines by the glass and have a Coravin program with about another 10 glasses that rotate seasonally to help provide an upscale experience and help guest explore regions they may not be overly familiar with.

I love this wine because it showcases the highest elevation in South America, which really helps the acidity and floral characteristics of the wine fully express themselves. It's also one of my most affordable wines, an easy way to help introduce guest to something they might not be familiar with while giving them a value product

Barda Pinot Noir, Bodega Chacra, 2023

A beautiful expression from Patagonia made from ungrafted vines and fermented in indigenous yeast and whole clusters. This wine is biodynamic and organic, and has a beautiful bouquet, fruitiness and freshness that pairs with many of our dishes. The winery was founded by the grand-nephew of Sassicaia estate's founder, beautiful history and craftsmanship to this wine.

I love introducing my guests to the wonders of South America and winemakers that are innovative and creative, who have ethical practices to farming and craftsmanship
