A Michelin starred fine dining restaurant based in what was previosuly one of Auckland's top bistros. Focused on seasonal, New Zealand produce and constant evolution. The menu is inspired by memories of travel from around the world. The wine programme is curated to showcase both icons and lesser known producers from around the world with a focus on pairings with our dishes.

We pour over 30 wines BTG. There are 3 BTG sections, first, Wine of the Week, chosen by each FOH member allowing them to talk about their own choice with guests & learn about designing lists & pricing. Then,a Classic BTG list, our favourite local producers, changing monthly. Lastly, Pairings. Each wine on both pairing options, available BTG for guests to create their own pairing experience.

Joe Costello, Beverage Director

Originally from Ireland with over a decade of experience in wine & hospitality, with wine qualifications via CMS, Joe took the lead at Paris Butter in 2025. Championing local producers whilst incorporating wines from the Ancient, Old & New World, he has designed a wine programme which has placed him in the Top 10 Sommeliers in NZ & helped Paris Butter to earn its first Michelin Star.
