Ondîne is an intimate, 35-seat French bistro coming to the West Village in New York City from chef John Fraser.

We pour 24 by the glass, drawn from the same producer-led spine as the list. The focus is southern France, the regions that actually belong next to bistro food. Coravin means we can open rare formats and small-production bottles for a single glass, so guests can taste their way through a producer rather than commit to one choice

Amy Racine is Beverage Director and Partner at JF Restaurants, a 2026 James Beard Semifinalist, and Wine Enthusiast’s 2024 Beverage Director of the Year.
