Agnes is built around the concept of cooking on an open fire. Our extensive and meticulously managed drinks program works within the venue’s atmosphere – each drink crafted or chosen to complement the rich flavours of our wood fire dishes. Our wine list is ever-growing, and our bar team’s talent in crafting cocktails is made all the more adventurous by a sprawling selection of spirits and curios.

At Agnes, our by-the-glass program highlights exploration, transporting each guest to a different part of the world through indigenous varietals, lesser-celebrated wine regions and supporting artisanal producers. Our cellar is full of hidden wonders, rare gems and old favourites, from 6L shiraz to demijohns of ratafia, that cannot be found anywhere else in the country.

This is a beautifully bright and saline expression of Catarratto transporting you to the volcanic slopes of Sicily and showcasing the capabilities of the grape variety being briney and mineral-forward.

Billecart-Salmon 'Dame Jeanne' Ratafia MV

This is a wine that does not exist elsewhere in Australia, and so Agnes is the exclusive venue showcasing this exceptional wine. Crafted from the Clos-Saint-Hilaire vineyard, this is rare and a wine experience that cannot be enjoyed elsewhere in the southern hemisphere.

Partida Creus, TN, Tempranillo/Bobal/Sumoll Blend 2021

An earthy, savoury and exploratory wine that highlights indigenous varietals from Catalunya. Small batch, family run and expressive of both heritage and terroir, this wine is not for everyone but showcases the capabilities of low-intervention winemaking with native varieties.

Charlie Richards

Trained in Birmingham before moving to Mayfair, Charlie has recently moved to Australia to head the wine program at Agnes. Charlie was titled Best Young Sommelier in Australia of 2026 and will be competing for Best Young Sommelier of the World in October, alongside being named in the Top 5 Sommeliers of Australia. He is currently pursuing his Master of Wine and CMS Advanced Certifications.
