With more than 80 labels selected by specialist Gabriela Bigarelli and sommelier Oscar Paredes, our wine list reflects the core philosophy of the house: a special focus on organic and sustainable wines, appreciation of national production, and surprising pairings from the New World (NZ, South Africa, California). The 21+ labels available by the glass offer refined and complex pairings with the exclusive menu.

Gabriela Bigarelli built her passion for wine among vineyards and gastronomic experiences in Europe. Graduated from FISAR and ABS, she has worked as a maître, ambassador, and consultant. Today, at GB Consultoria, she connects importers, global wineries, and dining experiences. Oscar Paredes is an Ecuadorian sommelier graduated from ABS. In his passion for exploring the world, he is dedicated to promoting and democratizing wine.
