Set over two floors in an old bakery in Bath, Walcot House is home to a beautiful restaurant & private dining room and two cocktail bars. Our approach to food is simple. Expect dry-aged beef from our in-house butcher, hand-rolled pasta, home-baked bread and sustainable seafood straight off the boat. We have a cellar full of good wine, and we take our cocktails very seriously indeed.

Lalume, Dominio do Bibei (Ribeiro, Spain)

Not just another Spanish white, it’s a snapshot of the stunning valleys of Galicia. From indigenous Treixadura grapes, it captures that wild landscape perfectly. It’s elegant and textured, balancing intense aromas of apricot and wild herbs with a fresh saline kick and incredible acidity. A true gem that proves this region is making some of the most exciting wines in Europe right now.

Châteauneuf-du-Pape, Domaine Mayard (Rhône, France)

This is a fresh chapter for a historic family. Brothers Arthur and Hugo (the 6th generation) describe themselves as "peasant winemakers," obsessed with the health of their soil and plants. They use 80-to-120-year-old Grenache vines to create a wine that feels like an epic fruit and herbal infusion.

Russian River Chardonnay, Ramey (California, USA)

David Ramey is a massive name in California wine, and this bottle shows you why. He uses fruit from the cool Russian River Valley and ages it in a mix of French oak and concrete eggs to keep it fresh. The result : full-bodied and creamy with notes of tropical fruit, toasted almonds, and fresh pastry. It’s big and bold, but has a bright acidity that keeps it perfectly balanced.

His approach focuses on mentorship and team-based tasting, ensuring every bottle on the list is one the team personally loves.
